Alrighty then...welcome to Meal Planning 101. And when I say 101 - I mean REALLY- like the basic skills of cooking, here, you guys.
Because a cook/chef---I am not. If I'm being completely honest, I MAYBE make dinner once or twice a week. I'm talking like when I actually get out my huge recipe book (that my Martha Stewart-esque Mom put together for me) and MAKE something from it. Instead of eating cereal, or making my hubby stop & get some crappy fast food on his way home from work. I know...shame shame.
Now, I can make a mean Mac & Cheese - but as we all know, that is not all that hard.
Confession--it used to be super hard for me...I burned the noodles all the time :)

So, last week, I thought to myself, "Self...you need to make some actual dinners this week." So I set a goal for myself to cook 4 WHOLE DINNERS. And I did it!!! I actually cooked FIVE!!
Where's my applause, people!? :)
Well, the dishes turned out SO GOOD..that I thought..maybe there are some less-fortunate-in-the-kitchen-abilities-area like me that want some good, easy and yumm-o dinners! Eh? Yes?!
I have NEVER made a roast before on my own. Never. This was SO EASY and my hubby raved and raved about this for days.
Such a good & simple recipe. Can't go wrong with pesto!
This is one of our go-to meals. I make this a lot -- and I still love it every time.
I just bought one rotisserie chicken and used it for Thurs & Fridays dinners.
I can't say enough about this yummmmmy soup! It is the epitome of FALL & WARMTH.
This stays good for like two weeks if you put some in a container in the fridge. Or you can freeze it and it'll stay for about a month.
So there you have it!!
